HONEY NUT LOAF WITH EGGS
- as printed in the Kangaroo Island Honey Cookbook

Half cup margarine
1 cup honey
2 eggs
One third cup milk
2 cups plain flour
2 tsps baking powder
1 cup sultanas
One quarter cup chopped raisins
One quarter cup chopped nuts

Cream butter and honey. Add eggs one at a time, beating well after each one. Add milk and the dry ingredients alternately. Gently stir in fruit and nuts. Grease and flour 2 small nut loaf tins and divide mixture evenly between them. Bake in a moderate oven for 50-60 minutes.

EUREKA LAMB

6 lamb chops (forequarters or chump)
2 tblspns oil
1 small tin crushed pineapple
Three quarters cup seeded raisins
2 oranges peeled and sliced
One half cup honey
1 tsp salt
One half tsp cinnamon
One half tsp mixed spice

Brown chops in oil then place in a casserole dish. Mix together remaining ingredients and pour over chops. Bake in m oderately slow oven for 30-40 minutes or until chops are tender. Delicious when served with rice and green vegetables.
