Summer Salad
~1/2 bowl lettuce or salad greens
~1 handful (each) of fresh blueberries, pineapple pieces, mandarian orange slices, sliced strawberries
~1 handful of walnuts or pecans
~Drizzle poppyseed dressing over the top and toss well.
~Add grilled citrus herb chicken over top, if desired.
Maryland Crab Cakes (Large Batch)
~2 eggs
~2 tablespoons Worcestershire
~1/4 teaspoon dry mustard
~1 teaspoon fresh parsley (or parsley flakes)
~1 teaspoon Old Bay seasoning
~1 teaspoon lemon juice
~3 teaspoons mustard
~3 teaspoons melted butter
~1 1/2 tablespoon mayonnaise
~1/3 cup bread crumbs
~mixed together thoroughly into large bowl
~add 16 ounces jumbo lump or lump crab meat by gently folding crabmeat into the base mix, keeping the crab in large lumps
~shape into crab cakes and place on a foil covered broiling plate to place in refrigerator for at least one hour (this step helps keep crab cakes shape)
~gently brush with butter or butter spray just before placing in oven on broil until cakes begin to brown
~turn cakes over and brush with butter before placing back in oven to brown
~can be served directly or even made into a crab cake sandwhich with lettuce, tomato, and even a light spread of tartar sauce onto toasted bread
Apple Pie
~6 large apples, either Granny Smith or Golden Delicious, peeled, cored, and cut into thick chunks
~2 tablespoons all-purpose flour
~1/8 teaspoon nutmeg
~1/4 teaspoon ground allspice
~1/2 teaspoon cinnamon
~1/4 teaspoon salt
~1/2 cup sugar, white or brown
~mix together in a large bowl
~pre-made crust will suffice if you don't want to make your own
~in a glass pie plate, spread out one section of crust flat
~pour in contents from large bowl
~add 2 tablespoons button, that has been cut into about 8 or so small pieces
~gently place second crust over the top, pinch edges to seal, and cut four slits in the center for steam vents
~Bake at 425 degrees for 40-50 minutes or until crust is starting to brown and juice begins to bubble through slits in crust
~Take from oven to cool for at least 30 minutes
~Serve with a scoop of vanialla ice cream or Cool Whip (frozen whipped cream)
