Jelly's Beef Stroganoff!

 

A hearty and filling meal for those colder months

This meal which i concocted after trying several different recipes off the Net works well in our household.

Ingredients:

250g Rump steak thinly sliced

1 large onion - sliced

1 clove garlic

250g mushrooms - thickly sliced

1/2 red capsicum - cut into strips

1 cup beef stock

2 tbsp olive oil

1/4 cup plain flour

salt and pepper to taste

1/2 cup sour cream

2 tbsp tomato paste

 

Combine flour, salt and pepper in a bowl. lightly coat beef strips in flour. heat 1 tbsp oil in large saucepan and cook beef in batches until browned - then remove.

heat 1 tbsp oil in same saucepan and cook oninon and garlic until soft. add mushrooms and cook for further 2 minutes. then add capsicum, beef, stock and tomato paste. Stir well and simmer with a lid for 20 minutes.

Just prior to servicing stir through sour cream. serve over rice or buttered egg noodles (wide flat) and garnish with parsley if desired.

Serves 4.
