Kiwi Fool

The other name for kiwi fruit is Chinese gooseberry. The kiwi has much of the flavour and character of the gooseberry. Which is why I sought out various old English gooseberry recipes and adapted them to kiwi. This is one of them. bath

Dissolve the sugar in the water
and bring it to the boil. Add the kiwis,
stirring in well over the heat &
then removing the pot so the fruit
can cool in the syrup.
When cool, drain the syrup &
puree the kiwi fruit.
Combine the kiwi fruit with
the whipped cream &
place in serving bowls,
garnished with slivers of fresh kiwi. Serve chilled.

1 CUP SUGAR
1 CUP WATER
2 CUPS PEELED AND
COARSELY CHOPPED KIWIS
1 CUP WHIPPED CREAM
